Both oils, small bottles, no commitment. Start with the yellow — it is what the mill is known for, mild enough for everyday tadka and cold enough pressed to still smell of the seed. The black is there for the days you want the kick.

A litre of each, which is roughly a month of ordinary cooking for four. The yellow does the daily work — dal, sabzi, the morning paratha. Keep the black for pickling and for fish.

Two litres of the yellow to one of the black, because that is the ratio most of our regulars settle into once they have cooked with it for a season. Our best price per litre on the oil we are known for.
